The Château Dallau Blanc was born from the desire to offer an accessible, expressive organic white wine. Sarah Vital, manager and oenologist of the estate, wanted to diversify her range by offering a fresh and aromatic white wine. The idea for a new white wine vinification emerged in 2021: a fallow plot behind a small stream presented a suitable terroir for growing Sauvignon and Sémillon! Thus, Château Dallau Blanc was born.
The vinification of this white wine is distinguished by a key step: the absence of skin maceration. Immediately after harvest, the white grapes are quickly pressed to extract only the juice, without allowing the skins, seeds, or stems to release their compounds. This clear juice, called must, is then placed in low-temperature fermentation in stainless steel tanks to preserve the freshness and fruity aromas of the grape varieties.
Our white wine undergoes aging on lees. Lees are the residues of yeasts and other natural grape particles after alcoholic fermentation.
In traditional aging, these lees are removed quickly. However, in lees aging, the wine is left to rest on these lees for several weeks to months. This allows for batonnage, the stirring of the lees to extract molecules that interact with the wine, giving it richness and indulgence.
This process offers several major benefits. It adds roundness and creaminess, more complex and persistent aromas, as the lees help to better fix the aromas in the wine. The lees also have an antioxidant effect that protects the wine during aging, contributing to better long-term stability.
Finally, in addition to enriching the wine, aging on lees improves its stability and balance, ensuring consistent and lasting quality.
Certified organic, Château Dallau Blanc embodies the ecological momentum of the estate. While all our wines come from vines grown using sustainable practices, this cuvée goes further by being certified Organic by Ecocert.

To date, 5 hectares of Vignobles Bertin are certified organic, reflecting our concrete commitment to advancing toward more environmentally friendly viticulture.
Château Dallau Blanc perfectly embodies the elegance of a white wine, regularly awarded medals in numerous French competitions or recognized by renowned tasters worldwide.
The first vintage (2024) was awarded a gold medal at the 2025 Lyon International Competition, testifying to the quality of this organic cuvée and its remarkable balance.
